Mini Gingerbread cakes

Delicious Mini Gingerbread cakes!

Tempo di preparazione: 40 minutes


  • 60 ml of maple syrup
  • 70 grams of dark brown sugar
  • 60 ml of extra virgin olive oil
  • 1 egg
  • 100 grams of whole milk
  • ½ teaspoon of bicarbonate of soda
  • ½ teaspoon of baking powder
  • 1 spoonful of fresh grated ginger
  • 1 teaspoon of powdered cinnamon
  • a pinch of nutmeg
  • 2/3 cloves
  • 130 grams of flour
  • For the icing:
  • 1 egg white
  • about 200 g of icing sugar


  1. Preheat the oven to 180°C.
  2. In a bowl, mix the maple syrup, brown sugar and oil.
  3. Beat the egg with the milk.
  4. Mix in thebicarbonate of soda, baking powder, spices and salt.
  5. Finally, add the flour, mixing well to obtain an even mixture.
  6. Fill the trees to two thirds and bake for about 15–20 minutes. Test
    with a toothpick to see whether it’s ready.
  7. When they are, leave to cool completely before decorating them.


  1. Whisk the whites and slowly add the icing sugar (sieved, preferably).
  2. Carry on whisking until the desired consistency is
    achieved. If it’s too runny, add more sugar.
  3. Fill a piping bag with the icing and decorate the trees, finishing as desired
    with sugar pearls.
