Mixed ice cream biscuits

Delicious and amusement little animals shaped ice cream biscuits

Preparation time: 40 minutes

INGREDIENTS 

SHORTCRUST PASTRY:

  • 175 g flour
  • 100 g semi-soft butter
  • 100 g icing sugar
  • 1 egg
  • 10 g cocoa powder (optional)

FILLING:

  • 600 g of ice cream of your choice in strawberry, chocolate, fior di latte, melon, peach, mint or pistachio flavours

DECORATION:

  • Coloured sugar sprinkles and strands

PREPARATION

SHORTCRUST PASTRY:

  1. Place the flour in a bowl (if you want a chocolate mixture, add to the flour)
  2. Add the sugar and butter
  3. Rub to form a breadcrumb mixture
  4. Add the egg and flavouring, being careful not to overwork the pastry
  5. Roll the pastry out on greaseproof paper to a thickness of approx. 4 mm
  6. Use the cookie cutter to cut out the biscuits and place them on the baking tray lined with greaseproof paper
  7. Press down the plunger to stamp the design into the pastry
  8. Gently detach the biscuits and arrange them on the baking tray.
  9. Bake in the oven at 175°C for 14 minutes.
  10. Remove the biscuits from the oven and allow to cool.

Fill the mould's six shapes with the ice cream of your choice, level off the tops and place in the freezer for a few hours.

ASSEMBLY AND DECORATION:

  1. Remove from the shapes and sandwich each ice cream immediately between two biscuits.
  2. Roll the edges in the sugar sprinkles or strands.

Serve immediately, or keep the ice cream biscuits in the freezer until needed.
