Orange panna cotta

A home made idea for Valentine's Day

Cooking time: 35 minuti

  • 280 g cream
  • 170 g milk
  • 130 g sugar
  • 12 g leaf gelatin
  • 1 orange
  • orange food colouring

  • 70 g orange juice
  • 16 g sugar
  • ¼ teaspoon corn starch
  • ½ tablespoon orange liqueur
  • almond oil for mould as required

  • edible flowers

  1. Remove the peel (without the pith) from the oranges and place it in a saucepan along with the cream, milk and sugar.
  2. Bring to the boil, leave to infuse for 40 minutes, then sieve.
  3. Soak the leaf gelatin in cold water for 10 minutes. Heat 50 g of cream and milk and melt the squeezed out leaf gelatin in it. Mix everything together.
  4. Take 4 tablespoons of the mixture, add a little orange food colouring: spoon it into the small heart shape of the mould, previously brushed with the almond oil and resting on a plate.
  5. Leave to set in the freezer for 10 minutes.
  6. Pour the orange panna cotta into the mould and leave to set in the fridge for 6/8 hours.

  1. Mix the orange juice together with the sugar, corn starch and liqueur.
  2. Thicken slightly on the heat, then leave to cool in a bowl.
  3. Turn the panna cotta out onto a serving plate and fill the hollow with the orange sauce.
  4. Keep the dessert out of the fridge for 30 minutes, decorate with edible flowers and serve with the remaining sauce.
