Pineapple custard
Preparation time 40 minutes
4-6 hours chilling time


  • 4 egg yolks
  • 70 g sugar
  • 40 g flour
  • 15 g corn starch
  • 200 ml cream
  • 200 ml milk
  • 70 ml pineapple juice

To decorate:

  • pineapple slices in syrup or juice
  • coloured sugar sweets


Difficulty easy

Beat the egg yolks and sugar together in a non-stick pan, add the flour and corn starch, mixing carefully. Meantime, heat the milk and cream in a saucepan and add the pineapple juice. Add the egg and sugar mixture a little at a time to the milk and cream, mixing carefully. Bring to the boil and continue cooking, mixing all the while, for another 3-4 minutes, then pour the mixture into the moulds and allow to set firmly in the fridge for at least 4-6 hours. Serve the custard with slices of pineapple, either fresh or canned in syrup or juice, and decorate the plates with sugar sweets.
