Plum cake with goji berries and redcurrants

Breakfast with love

Preparation time: 25 minutes + cooking 60 minutes



  • 6 eggs
  • 345 g flour
  • 45 g dried goji berries and redcurrants
  • 12 g baking powder
  • 3 pinches of salt
  • 125 g soft butter
  • 150 g cream at room temperature
  • 270 g sugar
  • grated zest of 1 orange
  •  juice of ½ an orange


  • Fresh blueberries, raspberries, redcurrants and strawberries
  • Mint leaves


  1. Soak the whole goji berries and the coarsely chopped redcurrants in the orange juice
  2. Beat the butter and sugar, adding the cream in 3-4 batches
  3. Flavour with the granted orange zest then, continuing to beat, add one egg at a time
  4. Sieve in the flour with the baking powder and the salt, mix and add the drained and floured berries and redcurrants
  5. Pour the mixture into the lightly buttered mould and smooth the surface
  6. Bake at 175° for 40 minutes, then lower the heat to 170° and cook for a further 20 minutes
  7. Remove from the oven and after a few minutes turn out onto a cooling rack and allow to cool
  8. Slice off the dome top
  9. Decorate with the fresh fruit and mint leaves
