Savoury biscuits with mini frittata

Serve these delicious savoury biscuits  with mini frittatas and enjoy them!

Preparation time: 45 minutes

INGREDIENTS

SAVOURY BISCUITS:

  • 200 g flour
  • 120 g lard
  • 15 g grated parmesan cheese
  • 2 egg yolks

MINI-FRITTATAS:

  • 3 eggs
  • 2 tablespoons grated parmesan cheese
  • 1+1/2 tablespoon breadcrumbs
  • 100 g robiola cheese
  • 1 tablespoon chopped parsley
  • 6 cheese slices or 2 slices of cooked ham sliced not too thinly
  • salt and pepper to taste

PREPARATION

SAVOURY BISCUITS:

  1. Mix the flour together with the grated cheese, salt, pepper and lard in a bowl.
  2. Rub the ingredients together to form a breadcrumb mixture, then add the egg yolks and combine into a dough.
  3. Wrap the dough in cling film and place in the fridge for 30 minutes.
  4. After resting in the fridge, roll the dough out on greaseproof paper to a thickness of approx. 4 mm and use the cookie cutters to cut out the biscuits.
  5. Space the biscuits out well on the baking tray lined with greaseproof paper, press down the plunger to stamp the design into the dough and gently detach the biscuit.
  6. Bake in the oven at 190°C for 10 minutes.
  7. Remove from the oven and allow the biscuits to cool on the baking tray, as they are very crumbly.

MINI-FRITTATAS:

  1. Beat the eggs together with a little salt and pepper.
  2. Mix the robiola and parmesan together, then add them to the eggs along with the breadcrumbs.
  3. Flavour with the chopped parsley and mix, then pour into the lightly greased shapes up to half way and bake at 175° for 15 minutes.

 

  1. Use the cookie cutter to cut out the cheese slices or cooked ham.
  2. Pair the biscuits with a mini-frittata and with the cut-out cheese or cooked ham shapes, as you prefer.
